Wife and kids use it too. Wife uses Strata more than any other pan, kids use Strata and non-stick. Both kids and wife will avoid heavier pans.
Love it! Lighter than I expected. Took three rounds of oven seasoning well. It did come off after a couple cooks but that is normal and expected. Part of the fun of using carbon. I have over 20 cast iron and carbon steel pans. As long as it doesn't delaminate or warp, I will be buying more.
Very lightweight and comfortable pan. After the first seasoning performed, as it is suggested, it was just working great, no issues, no food sticking. Perfect for me.
I bought the 10.5" as a dedicated nonstick egg pan for induction use, so I would get the even heating of a clad pan. It is hard to get a classic french omelet out of my cast iron, or my Matfers carbon steels because the sides don't get hot enough on the induction. My Alclad is even up the sides but needs A LOT of butter to prevent it from sticking. I did one Oven seasoning at 425 for an hour and an Uncle Scotts Kitchen "Flawless" both with grape seed oil. 1st Omelet was non stick perfect!!!!
I’ve been looking forward to this pan when I saw it on GoFundMe. I knew that it was going to be good, but it’s better than expected! It heats evenly, quickly, and maintains it steadily. I use it every morning to make my omelette with olive oil. I add the egg to the hot oil, and because the pan can cool quicker because of the aluminum core, I turn off the heat and the residual heat cooks the eggs but not too much to burn them!
