12.5" Nitrided Carbon Clad® – 3 Ply Carbon Steel Frying Pan GEN 2
U.S. Pat. No. 12,440,064
Our patented Nitrided Carbon Clad® Frying Pans take traditional carbon steel cookware to the next level with a 3-layered clad design. It delivers superior performance in a lightweight and versatile package by combining the stick-resistant properties of a carbon steel cooking surface with the even heating of aluminum.
Carbon steel becomes more stick-resistant the more you cook. As seasoning builds, so does performance! Please note, Nitriding doesn’t make it “super nonstick” right out of the box, but it does make those first few cooks a little easier.
If you’re looking to switch from traditional “nonstick” cookware and try carbon steel for the first time, the Carbon Clad® Nitrided Series is the perfect place to start.
What is Nitriding?
Nitrided carbon steel is heat-treated with nitrogen to harden the surface, making it more durable, rust-resistant, and a little less sticky in the beginning compared to plain carbon steel. It also gives it its dark appearance. Nitriding is not a coating; it’s a transformation of the steel’s surface by diffusing nitrogen into the steel.
Just like traditional carbon steel, it will still build seasoning over time and become increasingly stick-resistant as you cook. Nitriding doesn’t make it “super nonstick” right out of the box, but it does make those first few cooks a little easier.

Everything You Love about Carbon Steel…At Half the Weight
Naturally Stick-Resistant
No PTFE, PFOA, or ceramic coatings. Just carbon steel that becomes naturally stick-resistant as seasoning builds—improving with every cook instead of wearing out over time.
Lightweight
Strata’s aluminum core makes it dramatically lighter than traditional carbon steel or cast iron, while helping avoid the hot spots and warping common with thinner pans.
Even Heating
Traditional carbon steel can develop hot spots. Strata’s aluminum core spreads heat quickly and evenly for more consistent browning, searing, and temperature control.
Lasts a Lifetime
Unlike traditional nonstick pans that wear out and need replacing, Strata’s seasoned cooking surface can always be restored and re-seasoned. It’s built for a lifetime of hard use, and gets better with time.
What is Nitriding?
Beginner Friendly
It's easier to season! Think of nitriding kind of like pre-seasoning. The seasoning process of carbon steel is notoriously tricky. Nitriding GREATLY reduces some of that frustration. Making it less sticky when you first get started.
NOT a Coating!
Nitriding is not a coating; it’s a transformation of the steel’s surface by diffusing nitrogen into the steel.
Rust Resistance
Rust forms when iron reacts with oxygen and water. Nitriding changes the steel’s surface by bonding nitrogen with the iron, creating a harder, more stable layer that’s much less prone to rust.

Learning to Season
The KEY to Carbon Steel
Carbon steel builds a naturally stick-resistant cooking surface over time. It takes a little patience at first, but it’s easier than it sounds.
Every pan includes a Quick Start Guide + full care booklet to walk you through seasoning, cooking, cleaning, and everything in between.
