What is Nitriding?

Beginner Friendly

It's easier to season! Think of nitriding kind of like pre-seasoning. The seasoning process of carbon steel is notoriously tricky. Nitriding GREATLY reduces some of that frustration. Making it less sticky when you first get started.

NOT a Coating!

Nitriding is not a coating; it’s a transformation of the steel’s surface by diffusing nitrogen into the steel.

Rust Resistance

Rust forms when iron reacts with oxygen and water. Nitriding changes the steel’s surface by bonding nitrogen with the iron, creating a harder, more stable layer that’s much less prone to rust.

Awesome Pans!

Recently made the transition from Scanpan non-stick to Strata nitrided series 2 and couldn’t be happier! They took seasoning well and I love not having to worry much about rusting. And they look and feel very premium and are comfortable to work with.

Friendly tips… Don’t go too hot when cooking eggs. Just preheat for maybe 2 minutes on medium to medium low. And use a bit of butter to eliminate sticking, not oil. I also highly recommend getting a Nogent “fish spatula” to use with these pans.

So far so good

Since I have only had my pan set a month now I can’t speak to long term use on these. However in the month I have had these they are amazing so far. I have owned other Nitrated pans and Strata stands out for sure. They actually take seasoning beautifully vs the others that get sticky as you season and you need to keep them super clean for mediocre non stick performance. These heat super evenly as well thanks to the nice thick aluminum core. 10/10 so far these are my daily drivers.
