Everything You Love about Carbon Steel…At Half the Weight

Naturally Stick-Resistant

No PTFE, PFOA, or ceramic coatings. Just carbon steel that becomes naturally stick-resistant as seasoning builds, improving with every cook instead of wearing out over time.

Lightweight

Strata’s aluminum core makes it dramatically lighter than traditional carbon steel or cast iron, while helping avoid the hot spots and warping common with thinner pans.

Even Heating

Traditional carbon steel can develop hot spots. Strata’s aluminum core spreads heat quickly and evenly for more consistent browning, searing, and temperature control.

Lasts a Lifetime

Unlike traditional nonstick pans that wear out and need replacing, Strata’s seasoned cooking surface can always be restored and re-seasoned. It’s built for a lifetime of hard use, and gets better with time.

Learning to Season

The KEY to Carbon Steel

Carbon steel builds a naturally stick-resistant cooking surface over time. It takes a little patience at first, but it’s easier than it sounds.

Every pan includes a Quick Start Guide + full care booklet to walk you through seasoning, cooking, cleaning, and everything in between.

the perfect frying pan

Everything you love about a cast iron skillet, without everything you hate about one. The seasoning is quite durable. The non-stick surface is excellent. The weight of the skillet is just right. You can do things you could never do with a regular cast iron skillet, like flipping an omelet in mid-air. And what I loved most, besides its beauty, is that the handle doesn't get hot at all.

Great Purchase

Followed the instructions for seasoning & care and watched a couple of YouTube videos. My 8.5" pan works beautifully. Cooking over medium eggs in it works perfect–slick as a whistle!

This is the way

I had an 8.5” pan delivered a week ago and I’m already a convert. I’ve only owned cast iron pans and stainless pots prior - never even tried a carbon or stainless frying pan before. I seasoned it twice per the instructions using grapeseed oil and immediately went to town. I’ve fried many eggs, made a couple omelets, seared a steak, cooked salmon filets & chicken thighs. The pan is non-stick at this point and very smooth despite it changing appearance. Absolutely love it.

Best pan ever

I have had my pan for 3-4 months and it has become my everyday pan. I seasoned it when I received it as a gift and I oil it after every use and it is truly non-stick. A little fat in the pan and nothing sticks. I cleans up like Teflon. I does heat evenly on my induction stove top and I can cook anything in it including eggs and fish.

New season new pan

Excellent innovative triply carbon steel pan. Love the light weight and the release of food.

Very good pan; balance is slightly off

I like the pan. It is beautiful, lightweight and works well so far in my initial cooks. My only quibble is that I think my pan is a little too handle heavy. On my gas burner it stays mostly flat but on my Breville induction cooktop it leans slightly back and is not stable on the surface. This is probably due to a combination of it's light weight and the temperature sensor on the cooktop that protrudes up a bit, but it is slightly frustrating. Not really Strata's fault, just my observation.

Strata Fan

We own all 3 sizes and love them all! The 8.5” is my egg pan extraordinaire! My family members all request that I make them scrambled eggs (know affectionately as “Papa Eggs”) when we gather. My recent purchase of the 8.5” is a Christmas gift for my granddaughter and her husband. I took out of the box and seasoned it and repackaged it. Will wrap it up for Christmas Day smiles that it’s sure to make!

Great pan

This is my second Strate pan. After initial seasoning it’s a dream. Heats nicely and is better than cast iron and straight carbon steel. The blend is the best of all worlds. The perfect fry pan…

Great pan

I bought the Strata pan because i’m older, and I wanted a lighter carbon steel pan. It’s definitely lighter than my other CS pans. Two oven seasonings and the Strata is already non-stick when I cook. So happy with this pan.

Excellent Egg Pan

I love it for eggs. Small and easy to use, doesn't take up much space.

One of the best cookware ever for my no-nonstick kitchen...

I use only stainless steel, carbon steel and enameled cast iron in my kitchen (no PTFE). One very common drawback of carbon steel pans heating unevenly is not an issue here since they have aluminum and stainless steel clads underneath. This also makes the pans much lighter than regular carbon steel pans. Just after one layer of seasoning; fried eggs, omelettes and crepes move around easily. The handle stays comfortably cool and ergonomically easy to hold. Best purchase in years for my kitchen.

Became my Go-To pans

I pre-ordered the 12" pan, bought a 10" for a Christmas present, an 8", and finally a 10". I really like these pans. They have become my Go-To pans. I like the fact that they dissipate the heat more evenly throughout the pan. I cook on induction and my Matfer has hot spots over the coils. The only downside I see to these pans is that they don't retain the heat well. Since weight isn't an issue for me, it would be a perfect pan if it had more mass to hold the heat if that's possible.

Must Have

This is my go-to now. Lightweight, easy to season, excellent heat distribution, it’s perfect for cooking for 1-2.

This is the easiest, tastiest skillet to cook from of the comparable size and quality skillets I own. I’m really impressed!

My husband will try out the larger one because he does larger batch cooking. He’s out of town but is in for a treat. It too is lighter than our other skillets of the same size. The handle has a nice ergonomic feel and shape to it for my hand too.
