Very happy customer!

Got the pan for Christmas. Oven seasoned 2x and started cooking. Eggs, pancakes, burgers… all came out great. Eggs and pancakes didn’t stick and burgers formed an even, terrific crust. Easy cleanup. I dry on stovetop and add a bit of grape seed oil, wipe and store.

Pleasantly Surprised

My first time cooking with it was a complete disaster.I had to strip the seasoning off to get it clean. I seasoned it 3 times before using it again. The next couple of meals I only cooked fatty things like steaks & breakfast sausage. After every meal I would do a stove top seasoning on it as well. After using it only a handful of times, it is now crazy non-stick. It is much better than my Teflon coated pan. I would highly recommend this pan, just make sure to season it and cook on lower heat.

Excellent!

Oven seasoned with Crisco, perfectly! I have spent this year updating my cookware mostly with G5, after receiving the 10.5 Strata I love it so much I might replace my 12” G5 with the 12” Strata! Only reason for 4 stars is the handle seems a little cheap and maybe even a little crooked.

This is my second Strata pan and I must say this pan has renewed my excitement in cooking again. After years of cooking with cheap teflon pans, I’m excited to cook again!

I love how quickly it gets hot, how even the temperature is across the pan, how responsive it is to increase/decrease in flame, how the handle stays cool, and how lightweight it is.

Wife and kids use it too. Wife uses Strata more than any other pan, kids use Strata and non-stick. Both kids and wife will avoid heavier pans.

Love it!

Love it! Lighter than I expected. Took three rounds of oven seasoning well. It did come off after a couple cooks but that is normal and expected. Part of the fun of using carbon. I have over 20 cast iron and carbon steel pans. As long as it doesn't delaminate or warp, I will be buying more.

Disappointing

I've found it quite difficult to get my pan seasoned properly. I followed the directions carefully, seasoned, then re-seasoned the pan. But the seasoning is not consistent, and the pan is still quite sticky.

The perfect pan for induction

With how popular induction has become, I don't understand how a pan like this hasn't been made before. The amazing performance of a carbon steel surface, with a low-maintenance stainless steel exterior and an aluminium core for conductivity. Thick enough to resist warping, but lightweight. It's really the perfect design for induction. Obvious, but ingenious. I haven't bought anything from the US in over a year, but I'm glad I made an exception for this. I am now impatiently awaiting my wok!

Hate this thing already

I have used carbon steel before. This things sticks no matter what I try. Followed the instructions for seasoning to the letter. Useless since it destroys what ever I try to cook in it.

Perfect everyday pan

All the benefits of carbon steel with non of the weight and a much more comfortable handle than most. It heats up super fast too; love it. I will buy more in the future, and I hope they make a wok someday!

Great looking pan but no where in sight

This is a great looking pan and I’m sure it will perform well but I have yet to receive it and they are requesting a review so here it is. I hope it gets shipped out soon.

10.5" Strata Carbon Steel Clad Frying Pan

Just had it a few days, so getting the non stick layers built up, but lovely to cook with and no need to preheat to a high heat as with stainless steel. Great weight ie not heavy and nice handle. Cooking on induction without any problems.

I was looking for an alternative to my non-stick pans and while there is a learning curve with using this pan, it is working great and I want to switch out all my other pans as well now.

Perfect Everyday Pan

This pan is the perfect solution to heavy carbon steel. Thin carbon steel pans are light-ish, but they have really bad hotspots. Strata's pan is EVEN lighter than the thin normal carbon steel pans, AND it heats evenly. It's really a big deal, I'm so glad they made this!

It’s a good one!

I’m still seasoning my new pan. But my husband noticed the taste was better on fried eggs and I didn’t swear bc the egg yolks broke from sticking!!

Strata has become my go-to pan!

I have been using traditional carbon steel pans for years and they’ve all been moved to the pantry since purchasing a Strata pan. The light weight and even heating while still getting the same sear and wokhei as the heavier pans was such a pleasant surprise, I don’t see myself ever going back to the old style of carbon steel. And the fact that it’s clad is just an added bonus! The 10.5” is the perfect size for cooking for 2; my only suggestion would be to make another version with higher sides!

One of the best cookware ever for my no-nonstick kitchen...

I use only stainless steel, carbon steel and enameled cast iron in my kitchen (no PTFE). One very common drawback of carbon steel pans heating unevenly is not an issue here since they have aluminum and stainless steel clads underneath. This also makes the pans much lighter than regular carbon steel pans. Just after one layer of seasoning; fried eggs, omelettes and crepes move around easily. The handle stays comfortably cool and ergonomically easy to hold. Best purchase in years for my kitchen.

Love this pan

I'm so thrilled with this pan. It really is the perfect hybrid pan. Just as advertised, it has all the benefits of carbon steel with the weight and benefits of a stainless. I seasoned using the recommended oven method and the first season developed a great color. It took me a few cooks to learn the pan but ultimately it is easier use than my Matfer. If you like carbon steel, this is a must try.

BUT

I received my purchase through Amazon. It looks good and the build quality as well. The weight is noticeably better than my 3 ply clad pan of the same size BUT the bow on the bottom to prevent warping is a bit excessive. I have a 10.5 inch pan on an induction burner of 8 inches so I have to place the pan off-center to get it to heat up. I’m trying to find a way to decrease the bow since I can’t return the pan.
