Very good pan

Really satisfied with the pan. Got a really nice seasoning and it works as intended. Very light pan too.

Seasoning won't stick, but everything else does

Yes, I followed the seasoning instructions carefully. Yes I washed the pan 3 times in very hot water. EVERY time I use the pan the seasoning comes off. Yes I seasoned the pan twice before cooking wit it. After 4 or 5 uses there was hardly any seasoning left. I re-seasoned the pan 3 times before use and everything still sticks like crazy. I used a metal spatula once to scrape a stuck hamburger and it scratched the surface of the pan. it hasn't warped and it distributes heat evenly.

Still getting to grips

Despite its size, this 12.5" skillet weighs in far below my similar diameter cast iron. It's my first carbon steel so I'm still working out the seasoning process and cooking techniques. Heat distribution is surprisingly even across the surface. A little sticking with proteins and the initial seasoning was compromised removing food. Building up a few patchy layers but it seems to be improving. Only time will tell.

So Far, So Good!

While I've only cooked with it 3 times, it's worked well. First, the Strata seasoning video, which I followed exactly, worked perfectly. My first image is the first seasoning, the second image is after second seasoning. First, I cooked grilled cheese sandwiches, and it worked great. Second cook was sablefish, which did stick some. My third image is after my third cook, searing scallops with no sticking.

LOVE IT!!

Still in the early stages of seasoning, but I’m getting perfect searing and mostly nonstick already. Being this is a big pan, I thought it fitting to do a fat tomahawk steak in it and it was incredible cooking it in this pan. I love it so much already, I just bought the other two sizes!

Like it so much I'm getting one for my brother

I got the 12" pan during the Kickstarter! I seasoned it on stovetop and then just started cooking with it, no problem at all. (In the picture you can see the before & after.) WORKING EXACTLY AS I'D HOPED! I get the non-stick like performance I want and (more importantly) the light weight.
Of course, right after the bacon, I had to try the egg test. (see video). Besides having the temp too high it worked very well.
I like it so much I got the full 3 set (giving the 12" to my brother).

Great non-stick alternative to SS clad

This is my new go-to for general sauteing and one-pan meals. Basically like All Clad D3 but non-stick. Very even heating, although heat retention is not the best. I use a nice heavy Demeyere SS clad for searing and this for the rest.

a bit rocky seasoning, but it's great now

I liked my carbon steel pans, but they were heavy, and I had warped one, and I had the money, so I got the 12".

Seasoning seemed to go perfectly. It was almost too pretty to cook with. But when I did... food stuck, and the pretty seasoning came off in patches.

But I used it more, and now it's almost there.

I think the problem is, the surface is too smooth. Seasoning needs just a bit more texture to grab on. Maybe pretreat somehow? Bluing? scrub it with steel wool? It can be solved, I'm sure.

Excellent pan

Cooks well, even heat. Coming from cast iron and carbon steel pans the strata is a breeze to cook with acts like a multi ply stainless regarding temperature control has the natural non stick surface like carbon and cast

Great pan

Loving it so far. It's my new daily driver. Eggs in the morning, dinner at night. Eggs rarely stick much at all. Don't have to use too much oil. Super easy to clean. It lives on my stove. Will most likely get another one and never use another pan.

Exactly what I was looking for

I was looking for a CS pan that is a bit easier on my wrists than my usual iron go-to pan. And the Strata delivered. It weighs even less than my stainless steel pan. Overall the build quality is great and I do like using it. One thing I have noticed (as a carbon steel veteran of 20 years) is that the seasoning doesn't stick as easily as in my other pans. But with patience, it's getting there. Would buy again.

3rd pan I’ve purchased

Once seasoned it is completely non stick. It feels great never having to worry about Teflon related toxins, scratching or replacing pans. Plus the ability to toss it in the oven. It will truly last me my lifetime.

It's light

The weight is nice. I have used the pan less than a dozen times and followed the instructions. I use this on my glass cooktop. It is my newest skillet, and also the only one I have with a warp. Quite disappointing. I had high hopes.

5 Stars for the pans / ZERO Stars for business practice :(

I have the 8.5 and 10.5 inch pans and ABSOLUTELY LOVE THEM and decided to get the 12.5 inch also. It is however not good business to charge me $149 dollars when I order a pan early February with a estimated ship date of June 30th :(

Best of all worlds. Truly my dream pan.

Carbon steel has always been my go-to pan, and I never dreamed there would be a game changer in this realm of cooking, but Strata is a game changer. Before Strata, my only complaints were the weight and the warping with carbon steel. I learned to live with these, though warping sometimes required a little brute force. It was worth it for the joy of cooking with Carbon steel. However, Strata managed to overcome these two issues and created what I consider a dream pan.

This is what I would have made myself

I’m an engineer with an appreciation for cooking. A few months after using a cast iron pan in the kitchen, I realized that the thing I liked most was the seasoned cooking surface. I’ve thought of designing and making a pan like the Strata, but like many other ideas, this one never made it to my priority list. When I learned of Strata and what the pan was, I knew instantly I had to buy two, and I did. It was absolutely the correct choice for me. Highly recommend this pan, and carefully seasoning.

I must applaud the instruction booklet

Okay, I've never left a review specifically for an instruction booklet. But this one is excellent. It does a great job of setting up appropriate expectations, providing guidance and addressing concerns. In a world full of garbage manuals, this one stands out. So much in fact, that I suspect it reduces returns and complaints.

I've only cooked on it a few times after seasoning it 3 times in the oven. I was able to fry eggs and make pancakes with no trouble at all. Time will tell how we go on.

Light and easy to use

I like it. I just bought the 12.5 inch skillet to try against my cast iron pans. This is incredibly light, quick to heat and the handle remains cool to the touch. It’s become my go-to skillet.

Very Light Pan With Benefits of Carbon Steel

I love my traditional carbon steel pans but sometimes, like cast iron, they are too heavy. This ingenious 3-ply construction with a carbon steel cooking surface provides all of the benefits of carbon steel in a lightweight pan. Can season in oven or on stovetop but Strata recommends oven method, at least for initial seasoning, so that's what I did and it worked nicely. I did get a little bluing, but as the instructions say, that is fine, looks cool. As with all CS, requires some TLC.

Great idea for a carbon steel pan
A wonderful surprise

I had been looking for a good nonstick frying pan and started looking down the carbon steel path after doing much research on other people‘s opinions I came across a YouTube video with your carbon steel and stainless steel pan and I fell in love with the option and it was rated quite well and it’s the only one of its kind I loved it and now that I have it, I love it more , easy to use, my eggs have never looked better.

sticky and very expensive

followed all recommendations from the manual - but it is even more sticky than simple aluminum, do not understand the price point
