Carbon clad strata

Watched your you tube video.
Wash, dry, oil, 450 oven for an hour and let cool. 1st turned them blue/pretty purple pictured. 2nd darker navy hint of purple. Washed, dried, pad of butter and cooked eggs. Loosend edge with spatula and viola, eggs. Am positive it will only get better with use.

Very happy and would purchase again definitely. Might even as a gift.

Ordered from Germany. Parcel got struck in the US for 2 weeks. Still haven't got my pans.

So far not perfect, but hopeful.

seasoned in oven (twice as recommended). first cook went a little sideways on medium and large pans. seasoning came off, I think. I will re-season on stovetop or oven and see what happens. I am confident they will eventually work as advertised.

Been waiting to try these pans for almost a year now. As always expectations are high and fear of disappointment is equally high. BUT my oh my, the experience, the pans and food, all surpassed my high expectations. If you like to cook you need these pans.

So far, nothing but praise

I've only had them a few weeks, but so far they meet every expectation. A good proper seasoning on all 3 pans took a considerable amount of time as I didn't try to cram them all in the oven at once. I haven't had call to use the large pan yet, but the small has already seen some good use. Will see how they stand the test of time. They're in the ugly breaking-in phase, but I've had no issues with eggs or chicken sticking. Use of chainmail makes cleanup a breeze.

Love them! Takes some time to season them. I did season them 3 times in the oven. I use the large pan for egg scrambles with extra light olive oil and they just slide out of the pan! Highly recommended! Just be patient. The more use them the better!

works for me

I don';t know why someone hadn't thought of combining carbon with stainless steel before. and combine the best qualities of each. My Strata is lighter than the cast iron we used to use, cooks as well , and has far better handles. Freedom from sticking is similar and there's no surface that will be marred by steel utensils.

DISAPPOINTED & DISSATISFIED!

Skilled home chef c AllClad, and seasoned cast iron. Followed oven seasoning instr TTL c +\- results. NOT durable with warnings in the manual about EASILY overheating AND WARPING c routine use. Very thin lamination layers. LAME EXCUSES about the myth of high heat searing. Would return if I could. Cheaply executed brilliant idea. Would NOT RECOMMEND. (I have successfully seasoned & routinely use a high-end, carbon steel Wok).

Pans do what they claim

I bought the set of 3, seasoned ad suggested and the 3 fried eggs didn’t stick with a pat of butter. They are lighter than my full carbon steel pans and less maintenance than my cast iron.

Best part: tossed three non-stick pans and haven’t missed them.

All mine!

Was looking at non stick pans. Came across a review that mentioned Strata. Love the weight. No non stick coming off. Wasn’t sure what kind of cooking I want to do in the future. All 3 and you are pretty well covered. There is a bit of learning curve. Using induction burner so working on what level will be the best. My second attempt turned out a perfect over easy egg! Can’t wait for tomorrow.

One of the best cookware ever for my no-nonstick kitchen...

I use only stainless steel, carbon steel and enameled cast iron in my kitchen (no PTFE). One very common drawback of carbon steel pans heating unevenly is not an issue here since they have aluminum and stainless steel clads underneath. This also makes the pans much lighter than regular carbon steel pans. Just after one layer of seasoning; fried eggs, omelettes and crepes move around easily. The handle stays comfortably cool and ergonomically easy to hold. Best purchase in years for my kitchen.

I love my Strata carbon steel pans. They are much easier to handle than my cast iron or100% carbon steel pans because of the light weight.

Quite happy they did this

I am quite happy that they came up with this clad set. The lighter weight makes them easier to handle on the cook top. Got them seasoned using the oven and the first egg test (fried 2 together in the smaller pan) did wonderfully. Already cooked up steak, pork chops and breakfast sausage in the other two and nothing stuck and a quick deglaze with water cleaned them well enough that a light scrub took care of the rest. If you are wondering - yes they are worht it.

So far so great!

I’ve been using the Strata pans for a few weeks and they’ve already taken over as my go-to. They’re lightweight, easy to season, and perform great — eggs, bacon, panko chicken, no problem. The handle stays cool, which is a huge plus. I’m not sure they’ll outlast the more typical pans from the legacy brands, but I’ll take the wrist-friendly handling and mobility any day.

Way exceeded expectations

I got in early because I love carbon pans. However, I live in a "harsh marine environment". That is what the sailors call it.
So the idea of a SS outer and a carbon inner sounded ideal. I signed up for the "bundle". Had to bug them about the production progress. Then the issue of "imperfection", yes I will accept an imperfect pan. I have still to find the imperfection! Seasoning instructions are the best in the business. Made me change from hemp oil to grape seed.
